Located in Arnad, in the Aosta Valley, the Evançon cheese factory takes its name, meaning “clear water”, from the waterway running through the Ayas Valley – a tributary of the Dora Baltea river. The cheese factory was established when cheesemakers from 11 municipalities came together to form a cooperative.
All the cheese factory’s products are made with milk from our members’ farms. The cows are farmed traditionally and fed naturally: in summer they graze in the uplands and in winter they are fed hay and strictly GMO-free natural products. The first processing begins within two hours of milking; the milk is then subjected to rigorous checks that continue throughout all processing steps right up to the end product, to ensure utmost quality and authenticity. Processing is carried out in strict compliance with the Pro specification for Fontina cheese.
