Nestled in the heart of the Aosta Valley Alps, Altura is a young company specialising in the smoking of trout and freshwater fish processing. The project is the brainchild of Lorenzo and Edoardo, two friends with a passion for the mountains and good food, united in their pledge to help people rediscover a traditional but often overlooked mountain product. The raw material is strictly sourced from Alpine spring water. Next, traditional smoking with beech and apple tree wood, as well as seasoning with mountain herbs, add what it takes to produce a natural, high-quality product.
All fish is processed and filleted by hand in the small shop at Via Duca d’Aosta 56 in Verrès. The natural quality of the fish is preserved thanks to hand-processing and high-quality ingredients, enhancing its smoky flavour, leanness and the delicate taste of freshwater fish.
